の2つの文が繋がった『関係代名詞』を使った文です。だから、本当はThis is the watchとI bought last weekの間にthatが入ります。
関係代名詞の中でも、This is the watchだけでも、I bought last weekだけでも一文として成り立つものは並べ替えで出やすいです。(thatの後に主語がくる)
