Interested は 受け身の文(受動態)なので主にこのような用法が多いです。
Interesting は「〜が面白い(興味深い)」なので
ex) Playing tennis is interesting for me
(テニスをすることは興味深い)
ex)That’s very interesting.
(それはとても興味深い)
ex)It is very interesting for me to do such a thing.
(そのようなことをするのは私にとってとても興味深い)
