という文。なぜplayがつかないのでしょうか？

のようにbe動詞がつかなかったり付いたりしますよね？この違いはなんでしょうか？

スキーをするという意味なのでplayは不要です。

下の文、I think that this book is interesting.じゃないでしょうか？

needは一般動詞で必要とするという意味なので、be動詞（〜がある、〜だ、〜に居るなど）は不必要ということです。
