almost は副詞で、直接名詞を修飾できません。of があってもダメです。なので all という形容詞を間に入れて「〜のすべてのほとんど」という形にします。
almost all students でも almost all the students でもOK。almost all 〜という形で覚えておいた方が良いです。入試頻出です。
