Both of us→ 私たち(私たち両方)

Both of usの場合、2人の時だけ

Both of us need to finish the homework to play together(一緒に遊ぶためには、二人とも宿題を終わらせないといけない)

Each of us→ 一人一人

Each of us の場合、複数人の中でも「一人一人」なので、複数人でも大丈夫

Each of us have to try our best to stop global warming(地球温暖化を止めるには、私たち一人一人が最大限に努力しなければならない)

みたいな感じ
