よく見かけるのはinteresting inですがinteresting forという表現もよく使われるのでしょうか？教えて頂きたいです。

これはinteresting との関係というよりは
reasonという名詞がfor the reason（今回は限定詞はtheではありませんが）みたいな感じで前置詞forと組み合わせて使うからです。

ちなみにinteresting in〜　って
「〜な点で面白い」という意味で良いですか？
これもin 〜は別にinterestingと深く関係してるわけではないです。
例えばimportant in 〜とか、別に何でもいいですけど他の形容詞とも使えますから。
interested in〜　〜に興味がある　なんかは、
interestedっていう形容詞でなければ、in〜を置く意味がないですよね。
　
（前置詞の）目的語との関連で使われている前置詞の用法なのか、
それとも先行する形容詞や動詞との関連で使われている前置詞なのか
これは難しいかもしれませんが、区別できると良いです。
