I thinkときたらthatを入れるものだと思っていたのですが、答えはit'sでした。
なぜthatじゃいけないのか、など詳しく教えていただきたいです。

I think thatのthatは省略することができ、その後ろ節(主語 動詞のこと)がきます。
今回()の後ろはinterestingで形容詞なので、主語と動詞がありません。そのため()にthatを入れてしまうと、文法としておかしくなるため、it'sが入ります。

もし、()が2つあったら、that it'sかもしれませんし、it isかもしれません。
