ひとつ申し上げたいのですが、”men”は複数人を表すので、isではなくareを用います。ですので、

I don’t know the men that they are talking with Mr.Kato.

また、
①: She is a girl that Paul wants to meet.

②: Chris gave me the book, which was written by
his mother.

ですかね。
