most(最上級)の原級が much、比較級が more であると分かれば、納得するのではないでしょうか？
I will read books <that(S) interest(V) me(O) most(M)>.　私は＜私に最もたくさん興味を起こさせる＞本を読むつもりです。
原級：Books interest me (very) much(副詞).
比較級：Books interest me more.
最上級：Books interest me (the) most.
