What and which are both okay depending on the situation. Which usually means the choices are limited: which color do you like, red or blue?
What gives an open question so the answer can be anything that makes sense.

What color do you like?
Answer: Green
I cannot answer Green in the first question because the choices were limited to two colors to choose from.
