なぜ、what you can do today until tomorrowの順ではないのですか？
⇒　「長い主語、長い目的語は文の後ろの方に置く」という『暗黙の了解』と考えると良いと思います。
what you can do today until tomorrow は勿論間違いではありません。
put off(延期する)は必ず 「いつまで？」が重要なので until … を直後に置くのは理にかなっています。

〇 To finish your homework today is important. → ◎ It is important to finish your homework today.
△ I think to finish your homework today important. → ◎ I think it important to finish your homework today.
〇 Don't put off what you can do today until tomorrow. → Don't put off until tomorrow what you can do today.
