また、だとしたらwhich~とwhich~を繋ぐことは出来ないのでしょうか？なぜこの形になるのか知りたいです。

betweenって、品詞で言うと前置詞なので、
between A and B のAもBも名詞になってないとダメなんですよね。
内容的にはwhich〜のまとまりをABのセットにしても理解はできそうだけど、関係詞のまとまりは形容詞節だからダメで、文法的に整えるために名詞のthoseを置いてるのかなと
