英語の長文で2つ疑問があります。長文の左側に番号が振ってある行がわからないところです。

「and used it to sweeten food and drink, much as people do today.」のカンマがよくわかりません。
このカンマはあってもなくても良いのでしょうか。。
省略されているものを考えると
「and used it to sweeten food and drink as much as people used it to sweeten food and drink today.」
となるのでは？と考えたのですが、この考え方はあっていますか？

●2
「offerings of it」とありますが、このofはどういう意味ですか？
それを与えること、であれば、offerは他動詞なので、offering itと言えばよいのでは？と思いました。。
第4文型から第3文型への書き換えでaskのときはofだったので、もしかしてofferも？と考えましたが、toでしかないような。。というところでどうにもならなくなりました💦
